Spinach Salad

Ingredients:
Salad:
  • 1 ½ pkg baby spinach
  • 1 can bean sprouts – drained
  • 1 can sliced water chestnuts – drained
  • 3 hard boiled eggs
  • 1/3 c. bacon bits
  • 1 sliced red onion

Dressing:
  • 1/3 c. ketchup
  • 1 c. oil
  • ½ c. sugar
  • ¼ c. vinegar
  • 1 tbsp. worchestershire sauce

Preparation:
  1. Combine  spinach, bean sprouts and water chestnuts in a large bowl.
  2. Slice hard boiled eggs.
  3. Combine dressing ingredients.  Mix well
Do not add the eggs, bacon and onion to the salad but let each individual add to own salad according to taste.

Salmon Patties

Ingredients:
  • 1 – 15 oz can pink salmon
  • 1 egg
  • 1/3 c. minced onion
  • ½ c. flour
  • 1 ½ tsp. baking powder

Preparation:
  1. Drain salmon.  Reserve 2 Tbsp. of the juice.
  2. Mix salmon, egg and onion until sticky. Stir in flour.
  3. Add baking powder to salmon juice – will be foamy.
  4. Stir into salmon mixture. 
  5. Form into patties and fry until golden brown – about 5 minutes.

Burgher Bean Cups

Ingredients:
  • 1 lb hamburger
  • 1 can cream of mushroom soup
  • Salt and pepper
  • 1/3 c. bread crumbs
  • ¼ c. chopped onion
  • 1 egg slightly beaten
  • 1 can green beans – drained
  • ¼ tsp. dill

Preparation:
  1. Mix ¼ can soup, beef, bread crumbs, onion, egg, salt and pepper. Divide into 4 equal mounds on waxed paper.  Flatten each mound into 5 inch circle.  Form a well in the center of each circle.  Remove from wax paper and place in baking dish.
  2. Combine soup, green beans and dill.  Spoon into each burger cup. 
  3. Bake at 350 ˚F for 30 minutes.

Impossible Taco Pie

Ingredients:
  • 1 lb hamburger
  • ½ c. chopped onion
  • 1 envelope Taco seasoning mix
  • 1 – 4 oz. can chopped green chilies – drained
  • 1 ¼ c. milk
  • ¾ c. bisquik
  • 3 eggs
  • 2 sliced tomatoes
  • 1 c. shredded Monterey jack or cheddar cheese
  • Topping:
  • Sour cream
  • Chopped lettuce
  • Chopped tomatoes
  • Grated Cheese

Preparation:
  1. Grease large pie plate. 
  2. Cook beef and onions.  Stir in seasoning mix.
  3. Spread in plate, top with chilies.
  4. Beat milk, bisquik and egg until smooth.  Pour over meat and bake 25 minutes at 400 ˚F
  5. Top with tomatoes and cheese.  Bake until knife inserted in center comes clean – approx. 8 – 10 minutes.
  6. Cool 5 minutes. Top with sour cream, tomatoes, lettuce and cheese

Chop Suey


Ingredients:
  • 1 lb. beef chunks
  • 6 Tbsp. soy sauce
  • 3 Tbsp. molasses
  • 1 c. water
  • 2 cans Chinese vegetables
  • 2 Tbsp. cornstarch
  • ¼ c. water
  • Chinese noodles (chow mein noodles)
  • Rice – prepared per package directions.

Preparation:
  1. Brown meat.  Add soy sauce and molasses. Simmer 2 minutes.
  2. Add 1 cup water, simmer until meat is tender.
  3. Add Chinese vegetables.  Heat thoroughly.
  4. Blend cornstarch and ¼ c. water.  Add to meat mixture.  Stir until thickened.
  5. Serve over rice – top with Chinese noodles.
