Ingredients:
- 1 lb. large shrimp, peeled and deveined
- ¼ c. butter
- 2 tsp. olive oil
- 2 tsp. chopped onion
- 2 cloves minced garlic
- 1/8 tsp. salt
- 3 tsp. lemon juice
- ¼ tsp. lemon peel
- 2 tsp. chopped parsley
Preparation:
- Saute onion and garlic in olive oil.
- Add remaining ingredients, except shrimp to pan and simmer for about 5 minutes.
- Add shrimp and cook over medium heat, stirring and turning shrimp frequently until shrimp become white, approximately 10-15 minutes.
- To serve, place shrimp in shallow dish and pour sauce over them.
Serves 4.
*Note: Tastes good when served over pasta.
