Chicken Enchilada Casserole


Ingredients:
  • 1 diced onion
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • I can cream of mushroom soup
  • 1 lb. grated cheddar cheese
  • 2-3 lb. chicken, cooked
  • 1 pkg tortillas
  • 1 small can chopped mild green chilies
  • 2-3 Tbsp. butter

Preparation:
  1. Saute onion in butter.
  2. Combine with soups, broth, and chilies.
  3. Add chicken. Mix well.
  4. In 9X13 casserole, put a layer of tortillas, layer of soup/chicken, and a layer of cheese. Repeat until full.
  5. Bake at 350˚F for 30 minutes.
