Summer Sausage

Ingredients:
  • 5 lbs hamburger
  • 5 rounded tsp. mortons tender quick salt
  • 2 ½ tsp. mustard seed
  • 2 ½ tsp. pepper
  • 2 ½ tsp. garlic salt
  • 1 tsp. hickory smoked salt
  • 2 ½ tsp. liquid smoke

Preparation:
  1. Mix all ingredients together and refrigerate 3 days.  Mix well once a day.
  2. On the 4th day mix and form into three rolls.  Place on broiler pan.
  3. Bake 150˚F for 8 hours.
  4. Wrap in brown paper and age for 1 week in refrigerator.  Store in wax paper on foil.  Freezes well.
