Salad Supreme

Ingredients:
  • 2 – 3 oz pkg. orange jello
  • 1 – 20 oz can crushed pineapple – drain and save juice
  • 1 c. chopped walnuts
  • 1 – 8 oz pkg. softened cream cheese
  • 1 Tbsp. lemon juice
  • 3 Tbsp. flour
  • ¾ c. sugar
  • 2 beaten eggs
  • 1 – 8 oz pkg. cool whip

Preparation:
  1. Prepare jello – chill until congeals. 
  2. Add drained pineapple.  Pour into 13 x 9 pan. Sprinkle with ½ c walnuts, chill until set.
  3. Whip cream cheese and fold in cool whip. Spread over jello – cover and chill.
  4. Add enough water to pineapple juice to make 1 cup.  Combine rest of ingredients and add juice.
  5. Cook over low heat until thick, stirring constantly. 
  6. Chill thoroughly  - when cool spread mixture over cream cheese mixture and sprinkle with remaining walnuts.
