Potato Soup

Ingredients:
  • 4 c. peeled, cubed potatoes
  • 1 c. celery, chopped
  • 1 c. onion, chopped
  • 2 c. water
  • 1 c. milk or half & half
  • 1 c. whipping cream
  • 3 Tbsp. butter
  • 1 Tbsp. parsley (opt)
  • ½ tsp. caraway seed
  • 1/8 tsp. pepper
  • 2 Tbsp. salt

Preparation:
  1. Simmer potatoes, celery, and onion for 20 minutes, mash lightly.
  2. Stir in remaining ingredients.
  3. Heat and serve.
