Ingredients:
- 4 c. peeled, cubed potatoes
- 1 c. celery, chopped
- 1 c. onion, chopped
- 2 c. water
- 1 c. milk or half & half
- 1 c. whipping cream
- 3 Tbsp. butter
- 1 Tbsp. parsley (opt)
- ½ tsp. caraway seed
- 1/8 tsp. pepper
- 2 Tbsp. salt
Preparation:
- Simmer potatoes, celery, and onion for 20 minutes, mash lightly.
- Stir in remaining ingredients.
- Heat and serve.
