Pumpkin Cheesecake

Ingredients:
  • pie crust (or crushed gram crackers and 1/4 c melted butter)
  • 4 pkg cream cheese, softened
  • 1 c sugar
  • 1 can pumpkin
  • 1 T pumpkin pie spice
  • 1 t vanilla
  • 4 eggs
  • 1 c Cool Whip

Preparation:
Heat oven to 325. Beat cream cheese and sugar with mixer till blended.  Add pumpkin, spice and vanilla; mix well.  Add eggs, one at a time, mixing after each just until blended.  Pour into crust.  Bake 1 hour and 20 m to 1 hour and 30m or until center is set.  Refrigerate 4 hours.  Serve with a dollop of Cool Whip and dusting of spice.
