Flank Steak Stir Fry

Ingredients:
  • 2 tsp. cornstarch
  • 1/3 c. beef broth
  • 1 Tbsp. soy sauce
  • 1/8 tsp. pepper
  • 1 Tbsp. vegetable oil
  • 1/8 tsp. ground ginger
  • ½ lb beef flank steak cut into ¼ inch strips
  • ¼ c. julienned sweet red pepper
  • ½ c. julienned carrot
  • ½ c. sliced fresh mushrooms
  • ¾ c. fresh or frozen broccoli flowerets
  • Hot cooked rice

Preparation:
  1. Combine cornstarch, broth, soy sauce and pepper until smooth in a small bowl.  Set aside.
  2. Stir fry beef in oil and ginger until meat is no longer pink.
  3. Add broccoli, mushrooms, red pepper, and carrot.  Cook veggies until they are crisp and  tender.
  4. Stir in broth mixture. Bring to a boil.
  5. Cook and stir fry for 2 minutes or until thickened.
  6. Serve over rice.
