Ingredients:
- 2 tsp. cornstarch
- 1/3 c. beef broth
- 1 Tbsp. soy sauce
- 1/8 tsp. pepper
- 1 Tbsp. vegetable oil
- 1/8 tsp. ground ginger
- ½ lb beef flank steak cut into ¼ inch strips
- ¼ c. julienned sweet red pepper
- ½ c. julienned carrot
- ½ c. sliced fresh mushrooms
- ¾ c. fresh or frozen broccoli flowerets
- Hot cooked rice
Preparation:
- Combine cornstarch, broth, soy sauce and pepper until smooth in a small bowl. Set aside.
- Stir fry beef in oil and ginger until meat is no longer pink.
- Add broccoli, mushrooms, red pepper, and carrot. Cook veggies until they are crisp and tender.
- Stir in broth mixture. Bring to a boil.
- Cook and stir fry for 2 minutes or until thickened.
- Serve over rice.
